All onions are biennials, meaning they take two years to fully grow. In the first year, seed grows, forming modified leaves and tiny underground bulbs. In the succeeding year, red onion bulbs mature until they’re ready to harvest. The tops may be clipped for green onions (scallions).
Research shows that onions may offer many health benefits. Its sulfur-containing compounds produce its pungent odor; studies and trials show that these compounds have been found to lower blood sugar by triggering insulin production. Other possible health benefits of onions include lowering cholesterol and triglycerides in the blood, improving cell-membrane function in red blood cells, supporting the liver in processing toxins, and supporting healthy bones and connective tissues.
